To make the salsa: In a comal or pan, char tomato, onion, tomatillo, garlic, jalapeño and persimmon. Blend with salt, oregano, and cilantro. 2. Add chicken breast to instant pot, add salsa verde and chicken broth. 3. Add garlic, onion, Mexican oregano, salt, & cumin. 4. Cook for 45 minutes. 5. Add hominy. I used @juanitasfoods 6.
